  2. Put a pot of salt on the fire and boil the potatoes whole, skin and all, along with a pinch of salt.
  3. Once the water is boiling, allow about 20 minutes. Check that they are made, prick one with a fork and verify that they are soft.
  4. Besides, in a saucepan and with another pinch of salt, add the eggs and cook them for 10 minutes once the water boils.
  5. Let the potato and eggs cool a little. Reserve each one separately.
  6. Once the potatoes are cool, remove the skin and mash them with a fork, until they form a puree.
  7. Spread a large sheet of plastic wrap on the kitchen table or workbench. Place the mashed potato all over the paper. Leave a centimeter free on all edges.
  8. Now we move on to the eggs. Peel them and reserve an egg yolk from one of them. The rest chop it up.
  9. Take the onion, the pepper and do it in very small pieces, as if you were going to make a ratatouille, for example.

How to make the potato roll

  1. As if we were making a pizza, spread the tuna, hard-boiled egg, onion and pepper over the mashed potato, all very chopped up.
  2. Once the ingredients are placed on top, (we remind you that you can put whatever you want, this is just an example) it is time to roll.
  3. With the help of the plastic wrap on the base, stretch one end upwards and help the potato cover the ingredients and roll everything up. There must be a large cylinder, like a gypsy arm, with the potato outside and something inside as the beginning of the rolling, and the ingredients inside.
  4. If the potato roll stuffed with tuna is too long, you can cut it in two with a knife and put them on two plates.
  5. Chill in the fridge for at least half an hour.

Decoration and ways of serving

Before serving it to your family or guests, it’s time to decorate:

  1. Spread the whole roll with mayonnaise (top and sides).
  2. Grate the reserved egg yolk and sprinkle it on top of the rolls.
  3. Wash and julienne the lettuce, and add it around the roll, like a plate base.

As an optional decoration you can put some strips of anchovy, some chopped olives, grated carrots, some cherry tomatoes … or whatever comes to mind.

You can serve it warm for winter days. But you can also let it cool in the fridge, if it’s hot, like a fresh potato salad.

On the other hand, you can present it as a first course accompanied by a meat. But you can also make it as a single dish or as an aperitif in small quantities and accompanied by a cold beer or sangria. Tempting, huh?
