  2. Then, julienne the onion and finely chop the garlic.

  5. Cook until the meat is brown, let it cool a little and with that fill the zucchini.

What do you need?

  • 4 zucchini
  • 2 onions
  • 1 clove garlic
  • ½ kg of minced meat
  • 6 tablespoons olive oil
  • 2 large tomatoes
  • 1 red bell pepper
  • 1 large carrot
  • ½ glass of white wine
  • Salt and pepper to taste
  • Grated cheese for sprinkling

For the bechamel:

  • 125 grams of flour
  • 125 grams of butter
  • 1/2 liter of milk
  • Nutmeg, salt and pepper

Steps to follow:

  1. First, prepare the zucchini. Cut them in half and scoop up the filling with a spoon. Heat a casserole with water and a little salt and place the hollowed zucchini for one minute, nothing more. Remove and pat dry. Preheat the oven to 180 ° C while you are putting the zucchini on a greased tray. Season and bake for 10 minutes. Take out when they are tender and wipe off the excess water. Reservation.
  2. On the other hand, prepare the filling. For them, blanch the tomatoes and chop them into small squares. Chop the onions, bell pepper, garlic, peeled carrot and zucchini filling. In a saucepan, heat olive oil and sauté everything (except the tomatoes) for about 15 minutes. Don’t forget to add salt and pepper. Then add the meat and cook for about 7 minutes, stirring constantly. Add the tomatoes and white wine, let it continue cooking until a thick sauce is left.
  3. Next, prepare the béchamel: Sift the flour. Put the milk in a saucepan to heat without letting it boil. In another saucepan, place the butter so that it melts and add the flour little by little. Pour in the hot milk and season. Stir for 5 minutes to form a cream.
  4. Finally, turn the oven back on. Meanwhile, fill the zucchini with the meat sauce and a few tablespoons of béchamel on top. Sprinkle with grated cheese and gratin for 5 minutes over high heat.
